$10 Meals Breakfast Burrito

Shopping List

1 x Medium white onion ($0.47)
100g/3.5oz x Mild hatch green chili ($1.00)
3 x Rashers smokey bacon ($1.50)
3 x Medium size chicken eggs ($0.40)
1 x Can black beans (425g/10oz) ($1.00)
1 x Green bell pepper ($0.98)
110g/ 4oz x White button mushrooms ($0.80)
1 x Large Maris piper/Russet potato ($0.50)
115g/4oz x Monterry Jack cheese ($1.00)
170g/6oz x Sausage meat ($1.50)

Black Bean Mix

1 x Medium white onion (Peeled & Diced)
1 x Green bell pepper (Deseeded & Diced)
1 tsp x Garlic Powder
1 tsp x Paprika
1/4 x tsp Garlic powder
1 x Can black beans (425g/10oz)
100g/3.5oz x Mild hatch green chili
300ml/10.1floz x Water

Fillings

3 x Rashers smokey bacon
110g/ 4oz x White button mushrooms (Washed & Sliced)
115g/4oz x Monterry Jack cheese (Grated)
170g/6oz x Sausage meat (Rolled into rectangle patties)
3 x Medium size chicken eggs (Whisked in a bowl)

Hash Browns

1 x Large Maris piper/Russet potato (Washed & peeled soaking in water)
3 tsp x Paprika
1 tsp x Cracked black pepper
Oil/Clarified butter

Tortillas

200g/7oz x Plain/All purpose flour
10ml/0.3floz x Vegetable oil
Pinch x Natural sea salt
Water (Enough to bind)

Method

1) Place a medium pan onto a medium heat with a tablespoon of oil and add the diced onions and diced green peppers. Cook down for two minutes until they start to soften. Add the spices followed by the can of black beans. Add the hatch green chilies then the water. Turn the heat down to a low and cook out for about an hour until soft. Top up with more water if it dries too much.

2) Pre heat the oven to 180c/350f. Place the rashers onto a baking tray and place into the oven to cook for 8 minutes each side until golden crispy. Keep the bacon fat to use later on for the eggs. Prepare the rest of the fillings ready to go.

3) Place the tortilla mix into a mixing bowl apart from the water. Add water little by little until it has formed into a dough. Knead the dough for 5 minutes until smooth. Dust the work surface with flour. Cut the dough into 4 and roll each tortilla out to a 9-10 inch diameter or to the size of your frying pan. Place the frying pan onto a medium heat. Once hot add the tortillas one at a time cooking for 40 – 50 seconds each side until light colour. Take each tortilla out once cooked and place them in between pieces of foil. This will stop them from drying out.

4) Drain the water from the grated potato and refill with fresh water. Allow to stand for 30 minutes to get rid of any excess of starch. Drain off the excess water after 30 minutes and squeeze the potato dry with a towel or kitchen towel. Once dry add the paprika and the cracked black pepper to the grated potato, mixing well until it is incorporated.

5) Place a non stick pan onto a medium heat and add 2 tablespoons of oil or clarified butter. Add a handful of grated potato mix and cook down slowly mixing around occasionally until crispy. When the hash browns are ready season with natural sea salt.

6) Keeping the same pan on add another tablespoon of oil adding the mushrooms. Cooking down until soft. Once soft, take out of the pan and then heat the pan back up adding the sausage patties cooking 5 – 6 minutes each side. When you flip the patties add a pinch of cheese on top to melt. Take out once cooked and set aside with the mushrooms. Place the same pan back onto a low heat and add the whisked eggs. With a spatula mix the eggs efficiently taking off the heat if needed. Once creamy take off the heat all together and start assembling the breakfast burrito. Carefully place sausage patties, mushrooms, cheese, bacon, black bean mix, and the scrambled eggs. Wrap nice and tightly and serve with the hash browns.
