$10 Meals Huevos Rancheros

1 x Medium white onion ($0.47)

1 x Can black beans (425g/10oz) ($1.00)
2 tbsp x Hatch Green chili ($0.40)
115g/0.25lbs x Monterey jack cheese ($1.10)
2 x Vine tomatoes ($0.50)
1 x Large Avocado ($2.00)
1 x Large Maris piper/Russet potato ($0.50)
1 x Single Spring onion ($0.20)
110g x Unsalted Butter ($0.50)
2 x Large Eggs ($0.20)

Spicy Black Beans

1 x Medium white onion (Peeled & Diced)
4 x Garlic Cloves (Peeled & Grated)
1/2 x Orange Bell Pepper (Deseeded & Diced)
1 tsp x Dried thyme
1 x Vine tomatoes (Diced)
1 x Can black beans (425g/10oz)
2 tbsp x Mild hatch green chili (No seeds)
2 tsp x Paprika
1/2 tsp x Ground cumin
1/2 x Lime juice
Water (To top up during cooking)


250g/0.55lbs x Plain/All purpose flour
10ml/0.3floz x Vegetable/Canola oil
1 Pinch x Natural sea salt
Water (Enough to bind the dough)

Crushed Avocado

1 x Large Avocado (Ripe)
1/2 x Garlic clove (Peeled & Grated)
1/2 x Lime juice
1 x Pinch natural sea salt

Hash browns

1 x Large Maris piper/Russet potato
3 tsp x Paprika
1 tsp x Cracked black pepper
2 Pinches x Natural sea salt
110g/0.24lbs x Unsalted Butter


1 x Single Spring onion (Washed & Sliced)
115g/0.25lbs x Monterey jack cheese (Grated)
2 x Eggs


1) Place a medium size sauce pan onto a medium heat with a tablespoon of vegetable oil. Once hot add the onions, grated garlic and the thyme. Cook down for 5 minutes gently until soft. Next add the diced orange bell pepper and cook down for a few minutes until soft. Once soft add the diced tomatoes and cook for a further 3 minutes. Add the can of black beans followed by the hatch green chili. Next add the spices and the lime juice. Add a splash of water and turn the heat down to a low. Cook out for 2 hours very gently and keep adding water here and there, also mixing occasionally so it does not burn. Once finished taste and season with natural sea salt.

2) Prepare the garnishes by slicing the spring onions and setting aside. Grate the cheese and set aside for later.

3) Start making the dough for the tortillas by weighing out the ingredients into a medium size mixing bowl. Slowly add the water little by little until the dough has formed together. Take the dough out of the bowl and knead for 5 minutes until smooth. Cut the dough into 12 small equal size portions. Dust the work surface with flour and use a rolling pin to roll out each tortilla to approx 12 cm wide. Once the tortillas have all been rolled out, place a non stick pan onto a medium heat with a tablespoon of vegetable oil. Once hot lay each tortilla one at a time into the pan and cook for 30 – 40 seconds each side until golden. Take out and drain off onto a plate lined with kitchen roll.

4) Wash, peel and grate the potato into a large mixing bowl. Cover the grated potato with water and allow it to soak for one hour. Drain off and squeeze the grated potato to remove the excess water. Place the grated potato once it is dry into a dry mixing bowl. Add 3 teaspoons of paprika and 1 teaspoon of cracked black pepper. Place a large non stick pan onto a medium heat and once hot add the butter. Season the grated potato with 2 pinches of natural sea salt. Add two handfuls of the grated potato into the pan carefully flattening it out. Cook for about 5 minutes one side until golden, if it’s a touch dry add a small amount of oil as well. Flip the hash brown once golden and cook for another 5 minutes until golden again.

5) Wipe the non stick pan out with kitchen roll and add a table spoon of oil. Place on a low heat and crack your two eggs into the pan. Cook down gently and cook the eggs to how you like them. Build up the dish starting with the tortillas then the cheese. Followed by the beans and the hash brown folded over. Topped with more beans and cheese. Then place the eggs on top, followed with the crushed avocado. Finish the dish off with a cheeky slice of lime.
