$10 Meals Beef Chow Mein

Approx 4 – 6 Portions

Shopping List

225g/0.5lbs x Frying steak ($3.50)
4 tsp x Oyster Sauce ($1.00)
1/2 x Head Broccoli ($0.50)
120g/0.26lbs x Button mushrooms ($0.55)
1 x Garlic Bulb ($0.50)
2tsp x Fresh ginger ($0.60)
6tbsp x Light soy sauce ($0.40)
1/8 x White Cabbage ($0.25)
1 x Carrot (S0.20)
Total $7.50 (Baring in mind not including basic committees e.g. Flour, sugar, spices ect)

Beef

225g/0.5lbs x Frying steak
1 x Large garlic clove (Peeled & Grated)
1 tsp x Fresh ginger (Peeled & Grated)
2 tsp x Oyster sauce
3 tbsp x Light soy sauce

Vegetables

4 x Garlic cloves (Peeled & Grated)
1 tsp x Fresh ginger (Peeled & Grated)
1/8 x White cabbage (Sliced)
1 x Carrot (Peeled & Sliced into julienne)
120g/0.26lbs x Button mushrooms (Wiped & Sliced)
1/2 Head x Broccoli (Sliced thinly & the stalks into julienne)
2 tsp x Oyster Sauce (Add when cooking)
3 tbsp x Light Soy sauce (Add when cooking)

Egg Noodles

200g/7oz x Plain/All purpose flour
20ml/0.67floz x Canola oil or oil of your choice)
2 Pinches x Natural sea salt
2 x Large Eggs
Milk (Enough to bind the dough)

Method

1) Place the steak into a bowl and add the ingredients. Mix well and allow the steak to marinade for a couple of hours. Cover and place into the fridge.

2) Place the grated ginger and garlic into a small bowl. In a separate bowl add the prepared vegetables and mix together.

3) Place a large pan onto boil for the egg noodles. Place the egg noodle ingredients into a mixing bowl apart from the milk. Mix well together and if a little dry add a small amount of milk until the dough binds together. Once bound together allow to rest for 5 minutes.

4) Cut the dough in half and lightly dust the work surface with flour. Roll out one of the halves of dough into a long rectangle, (check vod below for reference). Once thin, dust the pasta with flour and carefully start folding the dough like a book, (making sure you dust each layer with flour). Dust your chopping board with flour and dust your knife with flour to prevent any sticking. Carefully slice your noodles using a sharp knife. Repeat the process for the second dough.

5) Once the water is boiling carefully pick up the noodles with a spatula and carefully pull the noodles apart as you drop them into the boiling water to prevent them from clumping. Cook for 2 minutes then carefully take them out using a sieve and place them into ice or cold water. Repeat the same for the rest of the dough.

6) Place a large pan onto a high heat and add 2 teaspoons of canola oil or oil of your choice. Once hot season the beef steak and place onto the pan cooking for 1 minute per each side. Take the steak out and place onto a plate to rest before slicing. Leave the same pan on and add 1 tablespoon of canola oil. Add 2 handfuls of the vegetables, some of the grated ginger and garlic. Toss the vegetables and cook for 2 – 3 minutes. Drain off a handful of noodles and add to the pan. Cook out for 2 – 3 minutes more. Add the 3 tablespoons of light soy sauce and the 2 teaspoons of oyster sauce. Add the sliced beef and take off the heat. Garnish with sesame seeds if you have any and serve up. (If you want to serve this up for more portions use a large frying pan or repeat the process).
